Golden Dutch Pan-Fried Potatoes

This one takes me back to my childhood in the Netherlands, where gebakken aardappelen, or “fried potatoes,” are a beloved staple side dish. I loved having them back then—and still do. Just the smell of them brings back such happy memories.

This is my own take on the classic: I add garlic and sometimes herbs, which I think take it to the next level. And of course, a generous dollop of mayo or friet saus makes every bite simply heavenly.

Serves 4 adults.

Prep Time: 25 min

Make ahead cook time: 10 min after prep


Ingredients:

(olive oil, salt and pepper)

  • 800g baby new potatoes, washed

  • 75g butter

  • 2 garlic cloves, minced

  • Fresh herbs (optional – parsley, rosemary, thyme, or whatever you fancy)


Method:

  1. Bring a pot of water to a boil, then add the baby potatoes. Boil for about 20 minutes—they should be tender but not fully soft, as they'll continue cooking in the pan.

  2. Drain the potatoes and let them cool for a few minutes. Once cool enough to handle, slice them into rounds about ½ cm thick (more or less).

  3. In a large frying pan, melt half the butter over high heat. Add the sliced potatoes and a pinch of salt. Fry without stirring for a few minutes to allow them to brown.

  4. Gently toss the potatoes so they can brown on the other side. Try not to stir too much, so they don’t fall apart.

  5. Once they’re golden on both sides, add the remaining butter and the minced garlic. Mix gently and fry for a few more minutes.

  6. If you'd like, add fresh herbs during the last minute or two. When the potatoes are deep golden, slightly crispy, and fragrant, they’re ready to serve!


Serving Tips:

  • Serve with a dollop of mayonnaise or friet saus for that classic Dutch touch.

  • These potatoes pair perfectly with grilled fish, roast chicken, or steak.

  • Sprinkle with extra fresh herbs like parsley or chives right before serving for colour and freshness.


Tips & Tricks:

You can speed things up by using microwavable bags of baby potatoes. Just follow the cooking instructions on the bag, then jump straight to step 2 of the method. Same great result—less time in the kitchen!


Make-Ahead Meals Steps:

Cook the potatoes through step 2, then place them in a pan with half the butter. Cover and store in the fridge. When you're ready to cook, simply continue from step 3—quick, easy, and delicious!
