Seriously Easy and Tasty Potatoes

Golden, crispy, and full of flavour—these oven-roasted potatoes are the kind of side that quietly steals the show. Tossed with garlic, sweet red pepper, and fragrant rosemary, then drizzled with olive oil and roasted to perfection.
I use this version as a side to accompany both fish and meat dishes. It’s everything you want in a side: effortless, delicious, and irresistibly moreish.

Serves 4-5 adults -
Prep Time: 10 min Cooking Time: 45 minutes
Ingredients:
(olive oil, salt and pepper)
2 kg potatoes, peeled or scrubbed, cut into small pieces (about 2 cm)
4 garlic cloves, peeled and left whole or slightly crushed
2 small red peppers, finely chopped
A few sprigs of fresh rosemary
Method:
Preheat your oven to 200°C (fan).
While peeling and chopping the potatoes, place them in a bowl of water to prevent browning and remove excess starch.
Drain the potatoes well and transfer them to a roasting tray lined with baking foil or baking paper—this prevents sticking and makes cleanup easier.
Add the garlic cloves, chopped red peppers, and rosemary sprigs to the tray.
Drizzle generously with olive oil, then season with salt and black pepper. Toss everything together to coat well.
Roast for 45–50 minutes, tossing once or twice during cooking. Leave them a little longer if you like extra crunchy corners.
Remove from the oven and serve hot—either straight from the tray or on a serving dish.
Serving Tips:
Add a squeeze of lemon juice for a bright contrast (especially if served with fish).
Serve with a generous spoon of mayonnaise or aioli—the creamy, garlicky flavour pairs perfectly with the crispy potatoes.
Tips & Tricks:
Serving made easy: When moving the potatoes into a serving dish—especially when cooking for kids—simply lift the baking foil and transfer everything in one go. Less mess, less fuss!
Don’t toss the leftovers! In fact, I like to make a little extra on purpose. These potatoes are perfect the next day in an omelette or tossed into a salad for a quick, tasty lunch.
